Christmas is something very special every year. The fairytale smell of pine needles, the taste of cinnamon and nuts, the familiar music and the trickling of oatmeal... oatmeal? That’s right, we have a super-strong cookie recipe for you! Bikabee has created this delicious and wholesome alternative to any wheat biscuit. With oats, nuts and flax seeds you can easily conjure up the perfect Christmas cookies for you and your loved ones.
Ingredients | for about 15 cookies
- 100g 3Bears Porridge Three kinds of berries
- 30g walnuts or almonds (chopped)
- 20g flax seeds
- 100g wholemeal spelled flour
- 1/2 packet of baking powder
- 1 pinch of salt
- 1/2 teaspoon cinnamon, ground
- 3 tbsp brown sugar
- 2 tbsp coconut blossom sugar
- 1 egg
- 75g butter
Preparation
- Preheat the oven to 175° C (top and bottom heat).
- In a medium bowl, mix the porridge, nuts, flax seeds, flour, baking powder, cinnamon and salt with a spoon
- Using a hand mixer, mix the butter, egg and both types of sugar in a larger bowl
- Add the dry ingredients to the butter mixture and stir again
- Form about 15 equally sized dough balls with your hands and flatten them onto two baking trays lined with baking paper to the desired cookie size . Make sure there is enough space between the cookies because they will still rise a little
- Bake the cookies for 13 minutes and they are just right
- Enjoy
