Hearty pumpkin porridge is the perfect soul food for cold autumn days. The recipe for the hearty porridge is easy to prepare and quick to make. The 3Bears Porridge Crunchy Classic is the basis for the autumnal dish. The pumpkin and the porridge are simmered in broth, similar to a risotto, until the pumpkin is al dente and the oat flakes have reached the perfect consistency of creamy and crunchy. With a little rocket we conjure up color on the plate. Goat cream cheese and pine nuts give the pumpkin porridge even more creaminess and some crunch.
Ingredients
250g Hokkaido pumpkin
½ onion
olive oil
300ml vegetable broth
100g 3Bears Porridge A hearty classic
1 handful of arugula
1 tsp goat cream cheese
Pine nuts
Salt pepper
Preparation

First, cut the pumpkin in half and scrape out the fibrous flesh with a spoon. Cut the remaining firm pulp into cubes. Peel the onion and cut it into cubes as well.

Now heat some olive oil in a small pot and sauté the pumpkin and onion in it. As soon as the onion and pumpkin are golden brown, add the vegetable stock and simmer the pumpkin for about 5 minutes.

Then stir in 3Bears Porridge Crunchy Classic and continue to simmer until the porridge has a creamy consistency. Season with salt and pepper.

Serve the hearty pumpkin porridge with some rocket, pine nuts and goat's cream cheese.
