It's summer in the city! And we celebrate that with fruity overnight oats. Refined with mango and coconut, the recipe provides the perfect refreshment in the morning or in between! Our exotic fruit porridge mix with large pieces of mango, pineapple and apricot complements the fresh mango cream perfectly. The fresh basil gives the overnight oats a special touch. So nothing stands in the way of your exotic breakfast moment with this summery overnight oats recipe.
Ingredients
For 2 servings
100g exotic fruit porridge
200ml oat drink
2 tbsp coconut flakes
For the mango layer
100ml water
200g frozen or ripe mango
Decoration
Mango
2 tsp coconut flakes
Coconut chips
Fresh basil
Preparation
First mix the porridge with the coconut flakes. Then add the oat milk and let it soak overnight for at least 6 hours.
Tip for frozen mango: For decoration, defrost a few pieces of mango in the refrigerator overnight.
The next morning, put the fresh or frozen mango with water in the blender and blend. You can also set aside a few pieces of mango for decoration. Now divide half of the mango puree between 2 glasses. Then add the overnight oats on top of the mango layer. Finally, spread the remaining mango cream and top with mango pieces, coconut flakes, coconut chips and basil as desired.
