Baked Oatmeal – baked oatmeal. This may sound difficult to get used to at first, but trust me, it tastes as good as it looks! The beauty of this soul food breakfast is that it doesn't even take long to prepare. At the end you will have a small baked cake in front of you - and it wouldn't of taken no longer than 20 minutes, how great is that?

If you're one of those people who don't get out of bed until late, then this oatmeal is also ideal for a relaxed breakfast during the week.

You can use any of the 3Bears porridge varieties as a starting point - but to make it really aromatic, I recommend the apple cinnamon porridge (winter aromas permeate the house). You are also completely free to refine the oatmeal and let your creativity run wild - I topped it with half a banana because baked bananas taste incomparably good. Be sure to try it out!

Vegan baked oatmeal banana

The recipe

Serving: 1 Time: 20 minutes, including 12-15 minutes baking time

You need:

  • 2 handfuls of almonds, sliced
  • 1 cup of water
  • 4 tbsp 3Bears Cinnamon Apple Porridge
  • 1 pinch of sea salt
  • 1 tbsp date puree
  • ½ banana
  • Some coconut oil
  • A small tartlet tin (12cm) or a similarly sized ovenproof dish

This is how it's done:

  • Preheat your oven to 200°C top/bottom heat.
  • Then put the almond slices together with the water in the blender and mix everything well until you get whitish almond milk.
  • Put the almond milk together with the apple cinnamon porridge, the sea salt and the date puree in a small pot and bring everything to the boil.
  • Turn down the heat and let the porridge simmer for a few minutes until the almond milk has been absorbed.
  • Now grease your mould with the coconut oil and put the porridge dough in it.
  • Top everything with half a banana (and maybe a few sliced ​​almonds) and place your oatmeal on the middle rack of the preheated oven.
  • Let everything bake for the next 12-15 minutes until the porridge has turned golden brown on the surface and the banana has a light aroma.
  • Remove and enjoy immediately!

Vegan Banana Baked Oatmeal

I don't think there is a better breakfast to start the day with - especially when your stomach is slightly warm and you've had a few hours to eat with the baked oatmeal, you can work with concentration and endurance until at least lunchtime.

It took me almost my entire life to discover this simple, yet incredibly delicious and soul-pleasing breakfast - don't make the same mistake as me and make sure you try the baked porridge! You won't regret it, I promise!

At the very end, you can of course add an extra wintry pinch of cinnamon as a topping.
