Vegan Coconut Porridge with Figs and Apricot Compote

Veganes Kokosnuss-Porridge mit Feigen und Aprikosenkompott

Whether sun or rain, we always like fruity colours in the porridge bowl! In summer, the 3Bears team loves the Fruity Coconut variety because, in addition to the superfood oats, it can also offer summery flavours such as coconut, dates and apricots. Of course, as always, without any additives!

For this recipe we also conjured up an apricot compote as a topping. You can also use fresh or pickled apricots and experiment with different toppings. Fig apricot porridge preparation recipe coconut

Ingredients

15 minutes | 1 bowl of porridge

  • 50g 3Bears Fruity Coconut
  • 150ml coconut milk, soy milk, almond milk or whole milk
  • 1 fresh fig
  • 1 tbsp desiccated coconut
  • Honey (as desired)

Apricot compote (for 2 - 3 servings)

  • 7-8 ripe apricots
  • 2 tbsp fresh lime juice
  • 2-3 tbsp sugar
  1. In a small pan, simmer the apricots, lime juice and sugar until the apricots slightly dissolve and begin to glisten (about 7-10 minutes).
  2. In the meantime, prepare the porridge according to the basic recipe . Mix the oat flakes with the milk of your choice and simmer on the stove for about 3 minutes.
  3. Set the porridge aside for a few minutes. The mixture may still be a little runny, as the porridge will soak up as it cools down. Also remove the apricot compote from the heat and let it cool briefly.
  4. Wash the fig, quarter it and place it on the porridge, then spread the apricot compote and the coconut flakes on top. Drizzle a little honey on top if you like and off you go into summer!

Ein tolles Rezept, besteht hierfür such die Möglichkeit einen Hinweis auf das verwendete Porzellan zu erhalten??? Das Auge isst doch immer ein wenig mit….♡
