Easy banana bread for spring brunch

Einfaches Bananenbrot mit Haferflocken

Easter is (is) different in 2020! The planned vacation is canceled, physical distancing from friends and family means plans are canceled...

But, there are other things that are different too! We finally have time to read the book that has been waiting for us on the bookshelf for ages. We let off steam in the kitchen and finally conjure up the dish that sounds so delicious...for example this delicious recipe: 3Bears Porridge Banana Bread .

Preparation time: 15 minutes | Baking time: 30 minutes

Ingredients:

4 bananas
75g coconut oil
50g brown sugar
30g coconut blossom sugar
100g wheat flour type 550
50g walnut protein powder (or 50g more flour)
50g walnuts
50g 3Bears Porridge Poppy Banana
20g flax seeds
1 teaspoon Baking powder
1 pinch of salt
1 pinch of nutmeg
100ml oat milk

Preparation:

  1. Mash the bananas in a large bowl with a fork.
  2. Heat the coconut oil slightly so that it becomes liquid and pour it into the bananas.
  3. Chop the nuts and add them with the sugar, flour and protein powder.
  4. Now add the remaining ingredients and mix with a hand mixer.
  5. Preheat the oven to 175 degrees (fan oven) and fill the dough into a loaf pan lined with baking paper
  6. Bake in the oven for 30 minutes.

Decorate the table for spring, serve the still warm banana bread and your perfect spring brunch is ready.
